Stir-Fried Rice Noodles with Marinated Fish

Ingredients:

  • 1 lb / 450 g angler fish or cod, cubed
  • 8 oz / 225 g salmon fillets, cubed
  • 2 tbsp. vegetable or peanut oil
  • 2 fresh green chilies, seeded and chopped
  • grated rind and juice of 1 lime
  • 1 tbsp. fish sauce
  • 4 oz / 115 g wide rice noodles
  • 2 tbsp. vegetable or peanut oil
  • 2 shallots, sliced
  • 2 garlic cloves, chopped finely
  • 1 fresh red chili, seeded and chopped
  • 2 tbsp. Thai soy sauce
  • 2 tbsp. chili sauce

Procedures:

Place the fish in a shallow bowl. To make the marinade, mix the oil, green chilies, lime juice and rind, and fish sauce together and pour over the fish. Cover and chill for 2 hours.

Put the noodles in a bowl and cover with boiling water. Leave for 8-10 minutes (check the package instructions) and drain well.

Heat the oil in a wok or large skillet and sauté the shallots, garlic, and red chili until lightly browned. Add the soy sauce and chili sauce. Add the fish and the marinade to the wok and stir-fry gently for 2-3 minutes until cooked through.

Add the drained noodles and stir gently. Sprinkle with cilantro and serve immediately.
